As I see it, you have 3 decent pitchers but you don't have that one big ace. That creates a dilemma because Sabathia or Peavy would be the #1 pitcher you need. In a 16 team league this is what I would do, and why. There are only 30 starting catchers in the major leagues while all 30 teams have a 5 man rotation so there are 150 starting pitchers. I would take Russell Martin not only because there are fewer catchers but because he is one of the top 3 catchers in baseball and there is a big dropoff from Martin and the other catchers you mentioned. I'm not saying Sabathia or Peavy aren't worthy because they are both top 10 starting pitchers, but at best they will pitch twice a week, sometimes only once. And with so many starting pitchers there are bound to be new names coming up during the season so it's easier to find a good starting pitcher on the free agent market than it is a good quality catcher. I'd select Russell Martin without any second thoughts about it. One of those other pitchers you mentioned will do just fine with your second pick. But, if you decide you'd rather have one of the pitchers with your 1st pick, look to see if Baltimore rookie catcher Matt Wieters is available as a later pick. MLB.com already rates him #11 among major league catchers and he has never played a game in the big leagues. Some fantasy sites don't include him because he has never played in the majors, but most fantasy sites do have him added to their game because of his star potential. He may begin 2009 in AAA but he won't be there long. Good luck no matter which direction you decide to go.
